Brown rice is the whole grain with only the hull removed, while white rice has been processed more, which results in less nutrients. You can buy rice generically called white or brown and for various varieties there will be brown and white available. There are four main categories of rice Indica, japonica, aromatic and glutinous. Rice is often categorized for sale by grain size(short, medium or long) and is sometimes sold with that generic designation. Short grain tends to be creamier and/or stickier, long grain is longer and tends to stay separated while medium is in between the two. Parboiled is a type of processing, with nutrition and cooking time between brown and white.
